A warm and comforting chicken noodle soup infused with anti-inflammatory turmeric and fresh ginger, perfect for soothing the soul and boosting immunity.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon turmeric powder
  • 6 cups chicken broth
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups cooked shredded chicken
  • 4 ounces egg noodles
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 4 minutes.
  2. Add minced garlic and grated ginger; cook for another 1-2 minutes until fragrant.
  3. Stir in turmeric powder and cook for 30 seconds to release its aroma.
  4. Pour in chicken broth and bring to a boil.
  5. Add sliced carrots and celery; reduce heat and simmer for 10 minutes until vegetables are tender.
  6. Stir in shredded chicken and egg noodles; cook for 6-8 minutes until noodles are al dente.
  7. Season with salt, pepper, and optional lemon juice.
  8. Remove from heat and garnish with fresh parsley before serving.

Notes

For extra depth, add a pinch of crushed red pepper flakes or a splash of coconut milk for creaminess.
