Turkey Stroganoff

A healthy twist on the classic beef stroganoff, Turkey Stroganoff features tender turkey breast in a creamy mushroom sauce, perfect for a comforting weeknight dinner.

  • 1 lb turkey breast, thinly sliced
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup low-sodium chicken broth
  • 1 cup sour cream
  • 2 tsp Dijon mustard
  • 1 tbsp all-purpose flour
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)
  • Egg noodles or rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add turkey slices and cook until browned and cooked through, about 5-7 minutes. Remove turkey and set aside.
  2. In the same skillet, add onions and garlic; sauté until softened, about 3 minutes.
  3. Add mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.
  4. Sprinkle flour over the mushrooms and stir to combine. Cook for 1 minute to remove raw flour taste.
  5. Gradually pour in chicken broth while stirring, bringing the mixture to a simmer until it thickens slightly.
  6. Reduce heat to low and stir in sour cream and Dijon mustard until smooth.
  7. Return the turkey to the skillet and warm through. Season with salt and pepper to taste.
  8. Serve over cooked egg noodles or rice. Garnish with chopped parsley if desired.

Notes

For an extra creamy texture, substitute half of the sour cream with Greek yogurt. This dish pairs wonderfully with a side of steamed green beans or a fresh garden salad.
