Turkey Medallions with Orange Teriyaki Sauce

Tender turkey medallions glazed with a vibrant orange teriyaki sauce, offering a perfect balance of citrus and savory flavors in a quick and healthy meal.

  • 1 lb turkey tenderloin, cut into medallions
  • 1/2 cup orange juice, freshly squeezed
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame oil
  • 1 tsp toasted sesame seeds (optional)
  • 2 green onions, sliced (optional)
  • Salt and pepper, to taste

Instructions

  1. Season turkey medallions lightly with salt and pepper.
  2. Heat sesame oil in a skillet over medium-high heat. Add turkey medallions and cook 3-4 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add garlic and ginger; sauté for about 30 seconds until fragrant.
  4. Mix orange juice, soy sauce, honey, and rice vinegar together and pour into the skillet.
  5. Bring sauce to a simmer, then stir in the cornstarch slurry to thicken. Cook for 2 minutes until sauce coats the back of a spoon.
  6. Return turkey medallions to the skillet and spoon sauce over them. Cook for another minute to warm through and glaze.
  7. Serve garnished with toasted sesame seeds and sliced green onions if desired.

Notes

For a complete meal, serve with steamed jasmine rice and sautéed vegetables. You can also substitute turkey with chicken breast if preferred.
