A comforting and flavorful Tomato Basil Noodle Soup featuring fresh tomatoes, aromatic basil, and tender noodles, perfect for a cozy meal any day.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 4 large ripe tomatoes, chopped
  • 1 cup egg noodles
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • Optional: Grated Parmesan cheese for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for another 1 minute until fragrant.
  3. Pour in vegetable broth and chopped tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Use an immersion blender to puree the soup until smooth, or carefully blend in batches in a blender.
  5. Return soup to pot and add egg noodles. Cook according to noodle package instructions, usually 7-8 minutes, until tender.
  6. Stir in fresh chopped basil and season with salt and pepper to taste.
  7. Serve hot, optionally garnished with grated Parmesan cheese.

Notes

For extra richness, stir in a splash of cream or coconut milk before serving.
