  • 1 tablespoon chopped fresh thyme or rosemary (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the sweet potato rounds with olive oil, salt, and black pepper until evenly coated.
  3. Arrange the sweet potato slices in a single layer on the prepared baking sheet.
  4. Bake for 20-25 minutes, flipping halfway through, until tender and slightly crispy on the edges.
  5. Remove from oven and let cool slightly.
  6. Top each sweet potato round with crumbled feta cheese.
  7. Drizzle honey evenly over the feta-topped rounds.
