  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups dried cranberries
  • 1 cup white chocolate chips
  • 1/2 cup chopped pecans
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tablespoon heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
  3. Stir in melted butter, egg, and vanilla extract until a dough forms.
  4. Fold in dried cranberries, white chocolate chips, and chopped pecans.
  5. Press the dough evenly into the prepared pan.
  6. Bake for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. While the bars cool, beat cream cheese, powdered sugar, and heavy cream together until smooth.
  8. Spread the cream cheese mixture over the cooled bars.
  9. Chill in the refrigerator for at least 1 hour before slicing into bars.
