Strawberry Cheesecake Stuffed Cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1/2 cup fresh strawberries, finely chopped
  • 2 tablespoons strawberry jam

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually blend dry ingredients into the wet ingredients until combined to form cookie dough.
  6. In a medium bowl, beat cream cheese until smooth. Add powdered sugar, chopped strawberries, and strawberry jam; mix until creamy and well combined to create the cheesecake filling.
  7. Take a tablespoon of cookie dough and flatten it in your palm. Place a teaspoon of cheesecake filling in the center and fold the dough around it, sealing completely.
  8. Place stuffed dough balls onto the prepared baking sheet, spacing about 2 inches apart.
  9. Bake for 12-14 minutes, or until the edges are lightly golden but centers remain soft.
  10. Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra fruity touch, drizzle melted white chocolate over cooled cookies or add a few fresh strawberry slices on top before serving.
