Spiced Pumpkin Bread with Toasted Nuts

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground ginger
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1/4 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup toasted chopped walnuts or pecans

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, and ginger.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition.
  5. Stir in the pumpkin puree, buttermilk, and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  7. Fold in the toasted chopped nuts evenly into the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra flavor, sprinkle some additional chopped nuts or a cinnamon sugar topping before baking. Serve warm with a spread of butter or cream cheese.
