  • 3 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/2 cup kalamata olives, pitted and halved
  • 1 medium red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. In a small bowl, whisk together lemon juice, olive oil, garlic, oregano, thyme, rosemary, salt, and pepper.
  2. Place chicken breasts in the slow cooker. Pour the lemon-herb mixture over the chicken.
  3. Add chicken broth, kalamata olives, sliced red onion, and cherry tomatoes to the slow cooker.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken is cooked through and tender.
  5. Once done, garnish with fresh chopped parsley before serving.
  6. Serve with rice, quinoa, or a Greek salad for a complete meal.

Notes
