Pumpkin Spice Pancakes

Fluffy pumpkin spice pancakes infused with warm autumn flavors, perfect for a cozy breakfast or brunch.

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 3/4 cup buttermilk
  • 1/2 cup canned pumpkin puree
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and all the spices.
  2. In another bowl, mix buttermilk, pumpkin puree, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined; do not overmix.
  4. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  5. Pour 1/4 cup batter onto the skillet for each pancake and cook until bubbles form on the surface, about 2-3 minutes.
  6. Flip pancakes and cook for another 2 minutes or until golden brown and cooked through.
  7. Serve warm with maple syrup, butter, or your favorite toppings.

Notes

For extra flavor, add chopped pecans or a dash of vanilla whipped cream on top before serving.
