This Pumpkin Spice French Toast Casserole is a warm, comforting fall breakfast featuring cinnamon-spiced bread soaked in a creamy pumpkin custard and baked to golden perfection.

  • 1 loaf brioche or challah bread, cut into 1-inch cubes
  • 2 cups pumpkin puree
  • 6 large eggs
  • 2 cups whole milk
  • 1/2 cup maple syrup, plus extra for serving
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar
  • 4 tablespoons unsalted butter, melted
  • Powdered sugar, for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. Place the cubed bread evenly in the prepared dish.
  3. In a large bowl, whisk together eggs, milk, pumpkin puree, maple syrup, pumpkin pie spice, cinnamon, vanilla extract, salt, and brown sugar until smooth.
  4. Pour the pumpkin custard mixture evenly over the bread cubes, pressing down gently to soak the bread.
  5. Drizzle the melted butter over the top.
  6. Cover the dish with foil and refrigerate for at least 1 hour or overnight for best results.
  7. Remove from fridge 30 minutes before baking. Bake covered for 30 minutes, then uncover and bake an additional 15-20 minutes until the top is golden and custard is set.
  8. Allow to cool slightly before serving. Garnish with powdered sugar and extra maple syrup if desired.

Notes

For added texture, sprinkle chopped pecans or walnuts on top before baking, and serve with whipped cream for an extra indulgence.
