  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 8 ounces egg noodles
  • 3 cups chicken broth
  • 3 tablespoons unsalted butter
  • 2 tablespoons chopped fresh parsley
  • 1 cup sliced mushrooms (optional)
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Season chicken thighs with garlic powder, paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook 5-6 minutes per side until golden and cooked through. Remove chicken and set aside.
  3. In the same skillet, add mushrooms if using and sauté until softened.
  4. Add egg noodles and chicken broth to the skillet. Bring to a boil, then reduce heat and simmer until noodles are tender and most liquid is absorbed, about 8-10 minutes.
  5. Stir in butter, Parmesan cheese, and parsley until noodles are coated and creamy.
  6. Return chicken to the skillet to warm through before serving.

Notes

For extra flavor, add a squeeze of fresh lemon juice over the chicken before serving or substitute egg noodles with your favorite pasta shape.
