Mint Oreo Brownies

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 20 Mint Oreos, roughly chopped
  • 1/2 cup mint chocolate chips
  • Optional: 1/4 teaspoon peppermint extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, mix the melted butter and granulated sugar until well combined.
  3. Add the eggs one at a time, beating well after each addition; then stir in the vanilla extract and peppermint extract if using.
  4. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chopped Mint Oreos and mint chocolate chips, reserving a few for topping.
  7. Pour the brownie batter into the prepared pan and spread evenly.
  8. Sprinkle the reserved Mint Oreos and chocolate chips on top.
  9. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
  10. Allow brownies to cool completely before cutting into squares and serving.

For an extra minty flavor, drizzle melted white chocolate peppermint bark over the cooled brownies before slicing.
