These Mint Chocolate Chip Protein Balls are a delicious and healthy no-bake snack, combining refreshing mint flavor with rich chocolate and packed with protein for sustained energy.

  • 1 cup rolled oats
  • 1/2 cup vanilla protein powder
  • 1/4 cup mini dark chocolate chips
  • 2 tbsp ground flaxseed
  • 1/4 cup natural almond butter
  • 2 tbsp honey or maple syrup
  • 1/2 tsp peppermint extract
  • 2-3 tbsp unsweetened almond milk

Instructions

  1. In a large bowl, combine rolled oats, protein powder, ground flaxseed, and mini chocolate chips.
  2. Add almond butter, honey (or maple syrup), and peppermint extract to the dry ingredients.
  3. Gradually add almond milk, 1 tablespoon at a time, and mix until the mixture holds together but is not too wet.
  4. Using your hands or a small cookie scoop, form the mixture into 12 equal-sized balls.
  5. Place the protein balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to one week.

Notes

For a nuttier twist, sprinkle some crushed peppermint candy on top before chilling, or roll the balls in shredded coconut for extra texture.
