Mediterranean Olive Cherry Tomato

A fresh and vibrant Mediterranean salad combining juicy cherry tomatoes and flavorful olives for a quick, healthy side dish or snack.

  • 1 cup cherry tomatoes, halved
  • 1/2 cup mixed Mediterranean olives, pitted and sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and freshly ground black pepper, to taste
  • Fresh basil leaves for garnish

Instructions

  1. In a medium bowl, combine the halved cherry tomatoes and sliced olives.
  2. Drizzle with extra virgin olive oil and red wine vinegar.
  3. Sprinkle the dried oregano over the mixture and season with salt and pepper.
  4. Toss gently to combine all ingredients evenly.
  5. Garnish with fresh basil leaves before serving.

Notes

For extra flavor, add crumbled feta cheese or a sprinkle of toasted pine nuts.
