  • 4 large carrots, peeled and cut into sticks
  • 2 medium apples, cored and sliced
  • 2 tablespoons Dijon mustard
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 teaspoon fresh thyme leaves (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, whisk together Dijon mustard, maple syrup, olive oil, salt, and pepper.
  3. Add the carrot sticks and apple slices to the bowl and toss well to coat evenly.
  4. Spread the mixture in a single layer on a baking sheet lined with parchment paper.
  5. Roast for 25-30 minutes, stirring halfway through, until carrots are tender and apples are caramelized.
  6. Remove from oven and sprinkle with fresh thyme leaves, if using.
