Loaded Potato Soup

This creamy Loaded Potato Soup is packed with tender potatoes, cheese, bacon, and green onions for a comforting and hearty meal perfect for chilly days.

  • 4 large russet potatoes, peeled and diced
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the bacon fat in the pot.
  2. Add diced onion to the pot and sauté in bacon fat until translucent, about 5 minutes. Add minced garlic and cook another minute.
  3. Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Using a potato masher or immersion blender, mash some of the potatoes in the pot to thicken the soup while leaving some chunks for texture.
  5. Stir in shredded cheddar cheese, heavy cream, and sour cream until fully melted and incorporated. Season with salt and pepper to taste.
  6. Serve soup hot, topped with reserved crispy bacon and sliced green onions.

Notes

For an extra creamy texture, substitute half of the heavy cream with whole milk. You can also add a pinch of smoked paprika for a subtle smoky flavor.
