Jam donut focaccia is a delightful fusion of soft Italian bread and sweet, fruity jam pockets, perfect for a unique dessert or snack that combines airy texture with rich flavor.

  • 3 ½ cups all-purpose flour
  • 2 teaspoons active dry yeast
  • 1 teaspoon sugar
  • 1 cup warm milk
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ cup fruit jam (such as raspberry or strawberry)
  • Powdered sugar for dusting
  • 1 tablespoon melted butter (optional)

Instructions

  1. In a small bowl, dissolve yeast and sugar in warm milk. Let sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt.
  3. Make a well in the center and pour in the yeast mixture and olive oil.
  4. Mix until a dough forms, then knead on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place dough in an oiled bowl, cover with a cloth, and let rise in a warm place until doubled in size (about 1 hour).
  6. Punch down the dough and roll it out into a rectangle about ½ inch thick.
  7. Drop teaspoons of jam evenly spaced over half the dough, then fold the other half over the jam spots, gently pressing edges to seal pockets.
  8. Transfer the dough to a baking sheet lined with parchment paper. Use your fingers to dimple the surface gently.
  9. Cover and let rise for another 30 minutes.
  10. Preheat oven to 375°F (190°C). Brush dough lightly with melted butter if desired.
  11. Bake for 20-25 minutes or until golden brown.
  12. Remove from oven, cool slightly, then dust with powdered sugar before serving.

For extra indulgence, serve warm with a scoop of vanilla ice cream or drizzle with a glaze made from powdered sugar and milk.
