  • 1 cup almond meal
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup granulated sugar
  • 3 large eggs
  • ½ cup unsalted butter, melted
  • ¼ cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 teaspoon almond extract
  • ½ cup plain Greek yogurt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a medium bowl, whisk together the flour, almond meal, baking powder, and salt.
  3. In a large bowl, beat the sugar and eggs until pale and fluffy.
  4. Slowly add the melted butter, mixing continuously.
  5. Stir in the orange juice, orange zest, almond extract, and Greek yogurt until combined.
  6. Gradually add the dry ingredients to the wet ingredients, folding gently until just combined.
  7. Pour the batter into the prepared pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. Dust with powdered sugar before serving, if desired.
