This Honey Cranberry Chicken Bake with Ricotta Cheese is a flavorful and comforting dish combining tender baked chicken, sweet-tart cranberries, creamy ricotta, and a drizzle of honey for a perfect balance.

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh or frozen cranberries
  • 1/2 cup ricotta cheese
  • 3 tablespoons honey
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley (optional garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, mix olive oil, honey, dried thyme, garlic powder, salt, and pepper.
  3. Place chicken breasts in a baking dish and brush each piece generously with the honey mixture.
  4. Scatter cranberries evenly around and on top of the chicken.
  5. Bake for 25 minutes, then remove from oven and dollop ricotta cheese evenly over each chicken breast.
  6. Return to oven and bake an additional 10 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Garnish with chopped fresh parsley before serving, if desired.

Notes

For extra flavor, serve with a side of roasted vegetables or a fresh green salad. You can also substitute ricotta with cream cheese for a richer texture.
