Ground Turkey Stuffed Peppers

Flavorful ground turkey mixed with rice and vegetables stuffed inside bell peppers, baked to a golden perfection for a healthy, hearty meal.

  • 4 large bell peppers, tops cut off and seeds removed
  • 1 lb ground turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  3. Add ground turkey and cook until browned, breaking it up with a spoon.
  4. Stir in diced tomatoes, cooked rice, oregano, cumin, salt, and pepper. Cook for 5 minutes until flavors combine.
  5. Stuff each bell pepper with the turkey mixture and place them upright in a baking dish.
  6. Sprinkle shredded mozzarella cheese over the stuffed peppers.
  7. Cover the dish with foil and bake for 25 minutes. Remove foil and bake an additional 10 minutes until cheese is melted and peppers are tender.
  8. Garnish with chopped parsley before serving if desired.

Notes

For extra flavor, try adding a splash of hot sauce or topping with avocado slices when serving.
