Gingerbread Men Cookies

Classic gingerbread men cookies are soft, spiced, and perfect for holiday baking. These charming treats blend warm ginger and cinnamon flavors in a delightful handmade cookie.

  • 3 cups all-purpose flour
  • 3/4 cup packed brown sugar
  • 3/4 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3/4 cup (1.5 sticks) unsalted butter, softened
  • 3/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together flour, brown sugar, baking soda, ginger, cinnamon, cloves, nutmeg, and salt.
  2. In a separate bowl, beat butter until creamy. Add molasses, egg, and vanilla extract; mix until combined.
  3. Gradually add dry ingredients to wet ingredients, mixing until dough forms. Divide dough in half, wrap in plastic, and chill for at least 2 hours.
  4. Preheat oven to 350°F (175°C). Roll out dough on a floured surface to 1/4 inch thickness.
  5. Use a gingerbread man cookie cutter to cut shapes. Place cookies on parchment-lined baking sheets.
  6. Bake for 8-10 minutes or until edges are firm. Let cool on baking sheets for 5 minutes then transfer to wire racks to cool completely.
  7. Decorate as desired once cooled.

Notes

For extra festive cookies, decorate with royal icing and colored sugar or candies once the cookies have fully cooled.
