Garlic Butter Beef Bites with Creamy Mashed Potatoes

  • 1 lb beef sirloin, cut into bite-sized pieces
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1/2 cup whole milk
  • 1/4 cup sour cream
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 15-20 minutes.
  2. While potatoes cook, heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
  3. Add beef bites to the skillet, season with salt and pepper, and sear until browned on all sides and cooked to your desired doneness, about 4-6 minutes.
  4. Add minced garlic and remaining 2 tablespoons butter to the skillet; sauté for an additional 1-2 minutes until fragrant and butter is melted. Remove from heat and set aside.
  5. Drain potatoes and return to pot. Mash with milk and sour cream until smooth and creamy. Season with salt and pepper to taste.
  6. Serve the garlic butter beef bites over a bed of creamy mashed potatoes. Garnish with chopped fresh parsley if desired.

Notes

For extra flavor, add a splash of beef broth to the mashed potatoes or sprinkle grated Parmesan cheese on top just before serving.
