Green Beans

Fresh green beans sautéed to tender crispness with garlic and olive oil, making a simple and healthy side dish perfect for any meal.

Ingredients

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Bring a large pot of salted water to a boil and blanch the green beans for 3-4 minutes until tender-crisp.
  2. Drain the green beans and immediately plunge them into ice water to stop cooking; drain again and set aside.
  3. Heat olive oil in a large skillet over medium heat.
  4. Add minced garlic and sauté for 1 minute until fragrant, being careful not to burn.
  5. Add the blanched green beans to the skillet and toss to coat in the garlic oil.
  6. Cook for 3-5 minutes, stirring occasionally, until heated through and slightly tender.
  7. Season with salt, black pepper, and optional lemon juice to taste.
  8. Serve warm as a delicious and nutritious side dish.

Notes

For added flavor, sprinkle toasted almonds or grated Parmesan cheese over the green beans before serving.
