French Chocolate Flan

This French Chocolate Flan is a rich, silky dessert combining deep chocolate flavor with a smooth custard texture, perfect for an elegant finish to any meal.

  • 4 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 6 oz bittersweet chocolate, finely chopped
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, heat milk and cream until just simmering, then remove from heat.
  3. Add the chopped chocolate to the hot milk mixture and whisk until fully melted and smooth.
  4. In a bowl, whisk eggs, sugar, vanilla extract, and salt until combined.
  5. Slowly pour the chocolate mixture into the egg mixture, whisking continuously to temper.
  6. Strain the custard through a fine sieve into a large measuring cup or bowl.
  7. Divide the custard evenly among ramekins.
  8. Place ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins (water bath).
  9. Bake for 40-45 minutes, until the flan is set but still slightly jiggly in the center.
  10. Remove ramekins from the water bath and cool to room temperature, then refrigerate for at least 4 hours before serving.

Notes

For extra richness, serve chilled flan with a dollop of whipped cream or fresh berries.
