Crispy Almond Cookies

Delight in these crispy almond cookies, perfectly crunchy with a nutty almond flavor, ideal for a sweet snack or dessert.

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, sugar, salt, and baking powder.
  3. In a separate bowl, beat the softened butter with the egg and vanilla extract until creamy.
  4. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  5. Fold in the sliced almonds evenly into the dough.
  6. Drop tablespoon-sized spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes or until the edges are golden brown and cookies are crisp.
  8. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra crunch, toast the sliced almonds lightly before mixing them into the dough.
