Creamy Tuscan Chicken is a rich and flavorful dish featuring tender chicken breasts cooked in a creamy sauce with sun-dried tomatoes, garlic, spinach, and Parmesan cheese, perfect for a comforting Italian-inspired meal.

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook until golden and cooked through, about 6-7 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  4. Add sun-dried tomatoes and cook for 2 minutes, stirring frequently.
  5. Pour in chicken broth and heavy cream, stirring to combine.
  6. Bring the sauce to a simmer, then add Parmesan cheese. Stir until the cheese melts and the sauce thickens.
  7. Add the fresh spinach and cook until wilted, about 2 minutes.
  8. Return the chicken breasts to the skillet, spoon the sauce over them, and cook for another 2-3 minutes to heat through.
  9. Serve warm, garnished with extra Parmesan if desired.
