Cowboy Queso Dip

Cowboy Queso Dip is a creamy, spicy cheese dip loaded with savory ground beef, jalapeños, and smoky chipotle flavors, perfect for game days or casual gatherings.

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and diced
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 oz Velveeta cheese, cubed
  • 1/2 cup milk
  • 1 teaspoon chipotle chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and jalapeño; cook until softened, about 3 minutes.
  2. Add garlic and cook for another 30 seconds until fragrant.
  3. Add ground beef to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
  4. Stir in diced tomatoes with green chilies, chipotle chili powder, cumin, salt, and pepper. Simmer for 5 minutes to blend flavors.
  5. Reduce heat to low and add Velveeta cubes, cheddar, and Monterey Jack cheese. Pour in milk and stir continuously until all the cheese melts and the dip is smooth.
  6. Adjust seasoning to taste. Keep warm on low heat or transfer to a slow cooker set on warm for serving.
  7. Garnish with fresh cilantro if desired and serve with tortilla chips or fresh vegetables.

Notes

For an extra kick, add diced green chilies or a splash of hot sauce. This dip is great served warm and pairs excellently with sliced jalapeños and crispy tortilla chips.
