Chocolate Mint Pie

This Chocolate Mint Pie features a rich chocolate filling enhanced with refreshing mint flavor, nestled in a crisp chocolate cookie crust—a perfect cool and creamy dessert.

  • 1 ½ cups chocolate cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 1 cup heavy cream
  • 8 ounces semi-sweet chocolate, chopped
  • 1 teaspoon peppermint extract
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • Fresh mint leaves and chocolate shavings for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Combine chocolate cookie crumbs and melted butter in a bowl until evenly moistened.
  2. Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake crust for 8 minutes. Remove and let cool completely.
  3. In a small saucepan, heat heavy cream until it just begins to simmer. Pour over chopped chocolate in a heatproof bowl and let sit for 2 minutes. Stir until smooth to make chocolate ganache. Stir in peppermint extract and let cool slightly.
  4. In a separate bowl, beat cream cheese and powdered sugar until smooth. Gradually add the cooled ganache and mix until combined and creamy.
  5. Pour the filling into the cooled crust and smooth the top. Refrigerate pie for at least 4 hours or until set.
  6. Before serving, garnish with fresh mint leaves and chocolate shavings if desired.

Notes

For an extra crunchy crust, toast the cookie crumbs lightly before mixing with butter. Serve chilled for the best texture and minty flavor.
