A fresh and wholesome Chickpea Feta Avocado Salad combining creamy avocado, tangy feta, and protein-rich chickpeas, perfect for a light lunch or side dish.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 ripe avocado, diced
  • 1/2 cup crumbled feta cheese
  • 1 small red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, combine the chickpeas, diced avocado, crumbled feta, chopped red onion, cherry tomatoes, and parsley.
  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the salad and gently toss to combine, taking care not to mash the avocado.
  4. Adjust seasoning with additional salt and pepper if needed.
  5. Serve immediately or chill for 10 minutes to allow flavors to meld before serving.

Notes

For extra crunch, sprinkle toasted pine nuts or sunflower seeds on top before serving.
